Hydrostatic head:
The hydrostatic head rating of functional clothing is a unit of measurement that indicates its level of impermeability.
The higher the hydrostatic head, the higher the amount of water pressure needed to make the material leak.
High-quality jackets tend to have their seams on the inside.
Waterproof is a relative term; a breathable material can never be 100% waterproof.

Breathability:
The breathability rating of functional clothing is a unit of measurement that indicates its level of water-vapour permeability.
Water vapour (sweat) moves from the inside to the outside of the jacket.
The higher the water-vapour permeability, the higher the amount of water vapour per unit of time that the fabric lets through.
The higher the temperature gradient, the higher the breathability.
When doing sports, your body loses multiple litres of sweat per hour. This pushes even the best membrane to it limits.
If the amount of water vapour is more than the garment can let through, the vapour accumulates inside,
and you have the impression that the garment is leaking.
The fabric ensures optimal transportation of water vapour.
