In Japan, the Kiritsuke is used for all tasks you would use a chefs knife for. Known as a chefs knife, it offers the highest cutting performance and versatility. With its straight edge, the Shun Premier 8" Kiritsuke is ideal for cutting and pushing cuts. Julienne, cubes or brunoise vegetables with ease. It is also an excellent choice for cleaning and portioning boneless proteins and especially fish. It cuts cooked proteins easily and gracefully. Each blade has a cutting core made from Shuns proprietary VG-MAX €œsuper steel. The multi-layer damask cladding supports the core and provides additional stain resistance. Near the blade, a wavy line is created similar to the hamon when samurai swords are hardened using a traditional clay baking technique.
